Good morning rowanberry, I made sloe gin a couple of years ago after making it each year for quite some time and made the mistake of cutting a circular cut around each sloe hoping to get more flavour out of the fruit. The result was that far too much pectin leached out and turned the gin misty. I've heard it's best not to cut or even prick the sloes, just leave tham as they are in the gin. I had to clear the gin by the addition of Pectolaze.
