Took this shot of the fading sunset at about 11pm last night. Looking slightly West of due North, could the bright star just visible to right of trees be Capella perhaps?

Yes, very likely. Capella is a bright star (well a star system really, but not visible as such with the naked eye)and therefore would show well as the sun sets. From anywhere north of 44 degrees north it is circumpolar so it never sets. At this time of the year it get to is lowest position in the sky, not far above the northern horizon around 11pm - midnight as seen from the UK.
